soup du jour....

this past weekend i made an absolutely delicious chowder that was so tasty and filling!! i made a really big batch and we had leftovers for lunch yesterday and will again today!  i've never been a big fan of chowder until i tried this yummy soup.  it is so low in calories, too.  so for any dieters out there, this is a great lunch or light dinner!  but it does not taste low-calorie {at all}!!!  want to try some of this tasty Cheddar Chicken Chowder?? here's the recipe for you....

{gather your ingredients}
 
2 extra lean turkey bacon slices
1 pound skinless, boneless chicken breast {diced}
1 onion {diced}
1 red pepper {diced}
2 garlic cloves {minced}
4 1/2 cups fat free low sodium chicken broth {or 2 cans}
4 medium red potatoes {cubed - skin on or off, your preference!}
1 lb. bag of frozen corn
1/2 cup AP flour
2 cups low fat milk
3/4 cups shredded cheese
1/2 tsp. salt
1/4 tsp. black pepper
 
 
{directions}
1. Cook bacon in a dutch oven over med. heat until crisp. Remove bacon from pan, crumble.  Set aside the bacon.
 
2.  Add chicken, onion, bell pepper and garlic to pan drippings, saute for 5 minutes. Add broth and potato, bring to a boil. Cover, reduce heat and simmer 20 minutes or until potatoe is tender. Add corn, stir well.

3.  Lightly spoon flour into dry measuring cup, and level with a knife. Place flour in a bowl. Gradually add milk, stirring with a whisk until blended; add to the soup. Bring to a boil over medium-high heat. Reduce heat to medium, and simmer 15 minutes or until thick, stirring frequently.
 
4.  Stir in the cheddar cheese, salt and pepper. Top with bacon!
