
the girls i nanny have been calling caleb the "cookie monster" for months now. ever since i gave them a few of my chocolate cookies and they realized that the rest of the batch was gone the very next day, they have never forgotten his love of cookies. even when they have cookies at their own house, they are extremely concerned that caleb will come over while they are at school and clean the pantry of cookies!! around the time amelia was born, i found a fabulous cookie recipe, and i make these for every get together, dinner party or guest that comes over!
{gather your ingredients}
1/3 cup butter, softened
2/3 cup shortening
1 cup sugar
1 cup packed brown sugar
2 eggs
2tsp vanilla extract
3 1/2 cups AP flour
1 tsp salt
1 tsp baking soda
2 cups semisweet chocolate chips {or more.... *wink*}
{directions}
- cream butter, shortening and sugars together until light and fluffy. add eggs {one at a time} and then beat in the vanilla.
- add in flour, salt and baking soda in increments, scraping down the sides as needed. STIR in the chocolate chips with a wooden spoon. drop by rounded tablespoons onto a lightly greased baking sheet. i use a small ice cream scooper for this and they turn out perfect every time.
- bake at 350 degrees for 10 minutes. cool for 2-3 minutes on sheet.
{yields 4 dozen, i cut this recipe in half for day-to-day baking}
